Culinary Philosophy • Farm-to-table refers to a culinary philosophy concerned with producing food locally and delivering that food to local consumers.
Alice Waters, chef, author, and the proprietor of Chez Panisse, is an American pioneer of a culinary philosophy that maintains that cooking should be based on the finest and freshest seasonal ingredients that are produced sustainably and locally.
Since 1971, Chez Panisse has invited diners to partake of the immediacy and excitement of vegetables just out of the garden, fruit right off the branch, and fish straight out of the sea. In doing so, Chez Panisse has established a network of nearby suppliers who, like the restaurant, are striving for both environmental harmony and delicious flavor.
For the past twenty-five years, Michael Pollan has been writing books and articles about the places where nature and culture intersect: on our plates, in our farms and gardens, and in the built environment.
“Close your eyes, and imagine sweet, plump scallops, perfectly seared and paired with a succotash of garden-fresh corn, cherry tomatoes, and lima beans. Or creamy grits against a bite of pork tenderloin sweetened with a touch of fresh peach relish.” ~ Karen Lingo, Southern Living
Salatin, hailed by the New York Times as “Virginia’s most multifaceted agrarian since Thomas Jefferson and the high priest of the pasture” and profiled in the Academy Award nominated documentary Food, Inc. and the bestselling book The Omnivore’s Dilemma, understands what food should be: Wholesome, seasonal, raised naturally, procured locally, prepared lovingly, and eaten with a profound reverence for the circle of life.
Slow Food is also simply about taking the time to slow down and to enjoy life with family and friends.
